A powerful yet elegant village-level Pinot Noir crafted from an assemblage of old-vine parcels (Le Poisot, En Boeuf, Les Noizons, Les Vignots). It reflects classic Pommard structure with finesse—vinified using organic/biodynamic methods—the hallmark of Nicolas Rossignol’s terroir-driven approach.

Appearance: Deep, clear garnet-purple with a bright rim—youthful and structured.

Nose: Aromas of concentrated dark cherry, blackberry and violet, underpinned by earth, iron-like minerality, subtle spice, and a hint of forest floor.

Taste: Medium-to-full bodied with firm, fine-grain tannins. Flavors of ripe dark berries, cocoa, spice and a touch of leather, balanced by fresh acidity and chalky structure.

Finish: Long and persistent, with dark fruit, minerality, spice, and refined tannic grip.

About the Producer: Nicolas Rossignol, a fifth-generation winemaker from Volnay, established his own estate in 1997 before merging with the family domaine. Today, he manages nearly 17 ha across Côte de Beaune, focusing exclusively on Pinot Noir. Farming is organic with biodynamic influences—no herbicides, light tilling, harvest by hand with minimal handling. Fermentation uses native yeasts, with occasional whole-cluster inclusion depending on the vintage. Wines are aged 18 months on fine lees (10–20% new oak), unfined and unfiltered, and bottled following malolactic fermentation. Rossignol is acclaimed for his thoughtful, terroir-expressive style, earning praise as “among the Côte de Beaune’s most serious producers” by William Kelley.
